Processing of fruits and vegetables – in the former Yugoslavia, most of our industrial fruits and vegetables were processed in other republics, which offered better conditions for redemption and payment. This influenced the increase in primary production in our country. After the independence of the Republic of Macedonia, our factories could not accept the raw material, and this abruptly reduced the primary production. During 1991-1993 This was processed 31,566 t vegetables, of which 11,861 T finished products were produced. In 1995-1997 6,168 T fruit or 4.9% of the total fruit production were processed. These are symbolically small quantities of processed fruit. According to the data of the Macedonian Association of Processors, in 2004 and 2005 It was produced after 26,000 T processed, dried and frozen fruits and vegetables, and 90% of this production have been exported to many countries, most in Germany and Serbia. The value of the products is about 20 million euros. This processing is carried out in 46 firms. The quantities of processed fruits and vegetables are minimal according to the possibilities for the production of raw materials and the capacity of processing objects. Most of our factories work with small capacity, lines are obsolete, and production uncompetitive. Without contemporary processing of fruits and vegetables, primary production can not be promoted. B.
